The Castelli Scaligeri city of Marostica is minutes away from Cittadella. See both in a day, if you can. While both cities apear small, there's a great mount to see. Bassano del Grappa and Castelfranco del Veneto are nearby and worth seeing.
To visit four great castles and in the heart of Soave wine region, Visit Arzignano, Montecchio (has Romeo's and Guilette's castles on the same hill), and Soave. If you're lucky, Montebello might be visitable on the way to Soave.
Starting from Verona and Castelvecchio, head north on A22 and visit Avio. Then continue north to Trento & Buonconsiglio. Then heading south, see the hilltop wonder that is Beseno, before going west at Mori to reach Lake Garda. Head south and see Malcesine and Lazise before returning to Verona.
See the full eastern shore of Lake Garda. Start at Sirmione, head east to Peschiera, then go north to Lazise, Torri del Benaco, Malcesine, Riva, and Arco. 7 great sites that can be viewed in a day, but would be better spread out over two or three. Especially as one passes through three of four wine regions.
Starting from Verona and Castelvecchio, head south to Villafranca di Verona, then go west to Valeggio and Borghetto, slide over to Castellaro Lagusello, Monzambano, Ponti sul Mincio, to Lake Garda and Peschiera, and finally to Lazise and back to Verona. It could be done in a day, but a long day that would be. You'll also see Austrian forts along the way.
